Ingredients:
  • 80g sugar
  • 5 pandanus leaf
  • 5 chicken egg yolk
  • Coconut Milk 200ml
  • Bread (is baked, sliced thin)

Step 2: Pour coconut ilk into pan, add pandanus leaf, sugar. Cook for 10 minute

Step 3: Let the pan onto a pot of boiling water for steamed. While cooking, you pour the egg mixture into the pan slowly and stir.
Step 4: Take pandanus leaf out and continue stir until the mixture is very thick, turn off the kitchen.

How to make "Banh Xeo"(Vietnamese Traditional Pancake)

Pancake is one of the "must-eat" traditional dishes in Vietnam. Like other dishes, there are many different recipes for this dishes. In this article, we will show you the basic recipe of this pancake.

Ingredients
Pancake
·        Rice flour - 150g.
·        Coconut milk - 200 ml.
·        Turmeric flour - 30g.
·        Mung bean - 50g.
·        Shrimp (Head removed) - 100g.
·        Bean sprouts
·        Pork - 100g (If you get fed up with pork, try chicken instead).
Sauce
·        Fish sauce - 40ml.
·        Sugar - 40g.
·        Garlic, red pepper, vegetables such as lettuce, perilla, bean sprouts.
·        6 – 7 fine chopped scallion leaves.
·        Cooking oil.
Method


Step 1: Batter
Mixing 150g of flour with 30g turmeric flour, 200ml coconut milk, 100ml of water in one bowl, put a cool compartment of the refrigerator for 1 hour.

Step 2: Fillings
- Soak mung beans in water until soft
- Boil pork until it is cooked throughly then slice it thinly.
- Wash bean sprouts and veggies
Step 3: Making Banh Xeo
- On medium-high heat add 1-2 teaspoons of oil and some onions.
Immediately add a few pieces of pork and shrimp. Sauté, lightly mixing until very lightly browned.
Pour in some batter and quickly tilt & rotate the pan so the batter is evenly spread. Add more batter if it is not enough to cover the pan.
Add some mung beans, bean sprouts, and cover with a lid for 2-3 minutes, or until bean sprouts are slightly cooked. The batter should also be slightly cooked and transparent around the edges. 
Remove the lid, lower heat to medium and wait for the crêpe to become crisp. Fold in half, transfer to a plate and serve immediately.
Step 4: Sauce
-         Mix sugar, garlic, chilli and vinegar then add water and stir it.
-         Add fish sauce and stir again.
